Craft beer from Seine-et-Marn is making a comeback with original local beers brewed with quality ingredients using traditional production techniques.
Driven by a desire to consume local products with character and to produce in a responsible and environmentally-friendly way, Lionel and Alex set about creating a craft brewery.
Nestling in the heart of a cave carved into the hillside, this atypical location is ideal for this type of business, particularly because of its stable temperature - around 11°C all year round.
The cavity is a former quarry, dug out of Champigny limestone using the "turned pillar" method: a mass of stones left by the quarrymen at regular intervals to create a structure.
The quarry mouth is a remarkable 6 metres wide by 4 metres high, and is accessible from ground level.
Stop off at their caves on the banks of the Seine for a tasting of their latest brew, and leave with a few bottles for your friends to enjoy!
